  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar

  • 1 tbsp heavy cream
  • 1 1/2 cups all-purpose flour
  • 3 cups kataifi (shredded phyllo dough)
  • 1 cup pistachio cream
  • 2 cups heavy cream (for ganache)
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350ยฐF and prepare an 8ร—8โ€ baking pan with butter and parchment paper.
  2. In a saucepan, melt the salted butter over medium heat until browned, then cool slightly.
  3. Mix dry ingredients: in a bowl, whisk together flour, baking soda, baking powder, and salt.
  4. In a large bowl, combine cooled brown butter with sugars; whisk in egg, cream, and vanilla until blended.
  5. Gradually add dry ingredients to wet mixture and fold in chocolate chips.
  6. Spread the dough evenly into the prepared pan and bake for 22-27 minutes until golden.
  7. For the pistachio filling, toast kataifi in melted butter until golden; mix with pistachio cream once cooled.
  8. Prepare ganache by heating heavy cream and pouring it over chocolate chips; stir until smooth.
  9. Layer pistachio filling over cooled cookie base, pour chocolate ganache on top, and chill before serving.
