  • 2 boxes refrigerated pie crust (14.1 oz each)
  • 1 can blueberry pie filling (21 oz)
  • 1 lemon (zested)
  • 1 egg (separated)
  • 2 1/2 cups powdered sugar
  • 1/4 cup lemon juice

Instructions

  1. Preheat your oven to 425°F.
  2. In a bowl, combine blueberry pie filling with lemon zest.
  3. Cut out 12 circles from the pie crust using a biscuit cutter.
  4. Place 1 tablespoon of filling in each circle, brush edges with egg yolk, fold, seal tightly with fork.
  5. Brush tops with beaten egg white and bake for about 15 minutes until golden brown.
  6. Whisk powdered sugar with lemon juice for the glaze and dip warm pies in it before serving.
