  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed)
  • 4 tablespoons non-dairy butter
  • 3/4 cup full-fat coconut milk
  • 1 teaspoon kosher salt
  • 1 cup freshly grated Parmesan cheese
  • 1 bunch chives (thinly chopped)
  • 2 sprigs fresh thyme (stems removed)
  • 3 leaves fresh sage (chopped)

Instructions

  1. Prepare the onions by peeling and thinly slicing them.
  2. In a skillet over medium heat, heat olive oil and add the sliced onions. Cook, stirring occasionally, until they are deep brown and sweet-smelling (40-50 minutes).
  3. Meanwhile, wash and chop the Yukon Gold potatoes. Boil in salted water until fork-tender (about 20 minutes).
  4. Drain potatoes and return them to the pot. Mash until smooth.
  5. Stir in non-dairy butter, kosher salt, and coconut milk until well combined.
  6. Mix in half of the caramelized onions and freshly grated Parmesan cheese until incorporated.
  7. Serve topped with remaining caramelized onions, chives, thyme, sage, and melted butter.
