  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cream of tartar, cinnamon, and salt.
  3. In a large bowl, use an electric mixer to cream the butter with granulated and brown sugars until light and fluffy.
  4. Add the egg and vanilla extract; mix until well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the chopped apples.
  7. Mix sugar and cinnamon in a small bowl for rolling.
  8. Roll tablespoon-sized dough portions into balls and coat in the cinnamon sugar mixture.
  9. Place on the prepared baking sheet and bake for 8–10 minutes until golden around the edges.
  10. Let cool slightly before transferring to a wire rack.
