  • 4 6-oz boneless skinless chicken breasts
  • 2 tsp italian seasoning
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground pepper
  • 12 tbsp olive oil
  • 34 medium ripe tomatoes (about 1 lb), cored, seeded, and chopped to a ½” dice
  • 1 tsp kosher salt
  • 2 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • 2 tbsp thinly sliced basil leaves
  • ground pepper to taste
  • balsamic glaze to taste, optional

Instructions

  1. Combine chopped tomatoes with salt and minced garlic in a mixing bowl. Mix until well combined and let sit while you cook the chicken.
  2. Place one chicken breast onto a sheet of parchment paper. Fold the paper over and pound the chicken to an even thickness of just under 1 inch. Set aside and repeat with remaining breasts.
  3. In a small bowl, mix together italian seasoning, kosher salt, garlic powder, onion powder, and ground pepper until well blended.
  4. Brush each chicken breast with olive oil. Sprinkle both sides generously with the seasoning blend.
  5. To grill, heat your grill or grill pan over high heat. Place seasoned chicken directly on the grates. Cook for about 5-6 minutes on each side until internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes.
  6. To bake, preheat your oven to 400°F. Line a baking sheet with parchment paper. Roast seasoned chicken for approximately 10-12 minutes until it reaches an internal temperature of 165°F. Let rest for five minutes after removing from oven.
  7. Stir together olive oil, balsamic vinegar, fresh basil, and ground pepper into the tomato mixture. Adjust seasonings as needed with additional salt or vinegar.
  8. Top each grilled or baked chicken breast generously with bruschetta mixture. Serve immediately for best flavor!
